Mountain Transitions by Jim Connor

Brussels sprouts are the very favorite vegetable of a very few people. One reason is that many cooks abuse them terribly and boil them into a slimy, smelly mess. This should not be allowed. The nutty flavor is enhanced by light steaming, stir-frying or roasting with olive oil. They should remain firm after cooking. This vegetable fares well in damp, cloudy and chilly weather.
